The Hoxton Grill is a classic Chicago grill, bar and lounge inside London’s Hoxton Hotel. Situated in the heart of Shoreditch, the Soho House restaurant is open from morning until late at night, serving American-inspired breakfast, brunch, dinner and drinks. In 2016, the Hoxton Hotel group underwent a full rebrand, which required a fresh identity for the Grill. Together with Soho House and the Hoxton Hotel I designed a new logo, print collateral, menus and signage.
Weekend mornings in bed
I literally know nothing better than those slow weekend mornings. Taking time, doing everything at a calmer, slower pace and giving in on staying in bed. Waking up to the smell of coffee or freshly baked bread... it's the best way of waking. It makes me happy, it soothes me. Especially when that strong scent of one (or both of those things), effortlessly pulls you out of bed, to go see what's at the end of that wonderfully smelling rainbow. That's the smell of someone caring for you, treasuring those slow weekend mornings just as much as you do. But frankly, there are no set rules or recipes to follow on how to best spend your Sunday morning. But those mornings when there is time to return to bed and nestle back into those soft cotton sheets with a tray of breakfast - that, to me, is how I prefer my weekend mornings to be.
Breakfast in bed. Second breakfast. Breakfast all day. It's a favourite of mine. I like the option of sweet or savoury, of coffee, tea or juice, of sitting in your bathrobe in the sofa with a bowl of granola, at the table with knife and fork, or in bed with a stack of banana pancakes. Breakfast anywhere, at any time. To me, the best kind is the one that is enjoyed in bed. With a book at hand or with someone else there to share it with you.
If you wake up early, you might even be able to have more than just one breakfast and have what you didn't have room for in the first round of breakfast. Take the time to practise your egg poaching skills, while you listen to the latest episode of the podcast you're currently following. Spend a few minutes gathering some of your favourite tunes in a playlist. Do whatever makes you feel good. Weekend mornings are all about just doing what you feel for.

I'm not very good at sleeping in. It happens rarely. Even though I've had a very busy week and my body just needs rest, I tend to wake up early. When I'm in the countryside by the sea, that fresh air naturally knocks me out, leaving me feeling tired shortly after dinner. The wind beats the restlessness out of me and eventually allows my sleep cycle to extend itself by a few hours. That's one of my favourite parts about leaving the city for the weekend. Whether it is the long walks by the sea or the silence surrounding us; my sleep improves. I think it also has something to do with the fact that the bedlinen has been left outside to dry, leaving some of that calming sea air in between their cotton threads. So, if I could, I'd change my sheets every day. I know nothing better. The feel of the crisp duvets, the sounds of the puffy feathers inside of them and the softness of the sheets has a hypnotising effect on me. Clean bedsheets has got to be one of the secrets to better sleep.
Fluffy banana pancakes
1,5 cup flour
2 tablespoons sugar
2,5 teaspoons baking powder
1/2 teaspoon salt
1 over-ripe banana
1 cup plus 2 tablespoons milk
2 large eggs
1/2 teaspoon vanilla extract
3 tablespoons unsalted butter, melted
Whisk together the flour, baking powder, sugar, vanilla and salt in a bowl. In another bowl, mash up the banana with a fork and add the eggs and milk. Melt the butter and pour it into the banana mixture. Mix together everything into a creamy batter.
Heat some butter on a non-stick pan and spoon the pancakes onto it. Cook until bubbles appear on the top and the underside is golden brown and crisp.
Serve with maple syrup, fresh sliced bananas and dusty sugar.
Sometimes I like to rise early to get a head start. At other times I enjoy rolling over a hundred times and pretend that I'm still asleep. Especially when my calendar for the weekend is somewhat empty and the weather forecast predicts rain, there is a a bullet proof excuse to spend all day in bed. You never really know how the day is going to transpire. But that first hour really sets the tone of the day. Therefore I like to make sure that it's as nourishing as possible. So before the day has a chance to impact your attitude, for better or worse, set the tone of the day yourself with those slow mornings. Treat yourself, or someone else, have exactly what you've been longing for all weekend for breakfast, wear a clean face, read, daydream and have second breakfasts.
